invincible salad

This is a Robinson family recipe. They'd usually make it at Christmas or Easter. I'm told it's called “invincible” after a guy named Vince.

Salad

• 6 cups spinach, washed, stems removed
• ⅓ lb bacon
• 2 cups white mushrooms
• 3 mandarin oranges or clementines
• 4 eggs

Dressing

• ⅓ cup salad oil
• ¼ cup white wine vinegar
• 2 Tbsp white wine
• 2 tsp soy sauce
• 1 tsp sugar
• 1 tsp mustard powder
• 1 tsp ground pepper
• ½ tsp curry powder
• ½ tsp salt
• ½ tsp garlic powder

The dressing needs quite a bit of shaking to emulsify it. I recommend using one of those salad dressing flasks.

Serves 4, though the last time I made this salad, there was a lot of dressing left over.
